This course is aimed at anyone that works in a food establishment but who does not directly handle or prepare food.
If you are a food handler on a food management team, HACCP Level 2 may be more appropriate for your needs.
If you are a manager or supervisor in a food business, you would need HACCP Level 3.
Course aims and learning outcomes
By the end of this course you will have a good basic understanding of HACCP and how it applies to food businesses.
The aim of this course is to give you a basic understanding of:
- What a food management system is and why it is important
- What the law says about food management systems
- What the HACCP system is and how it came about
- The main food hazards and risks
- The seven principles of the HACCP system

In every food business there are food hazards which can pose health risks to consumers; for example, bacteria can thrive under certain conditions and cause food to become contaminated.
In order to safeguard the public from foodborne illnesses, it is a legal requirement to have a food management plan.
HACCP is an internationally recognised standard for food management and helps food business operators to analyse, control and monitor potential food hazards in their business. This course will give you general awareness of food management plans and in particular HACCP.
